There are times when you want a fresh tasting green soup and you simply don't have fresh produce and you are not about to go shopping. Some of the frozen vegetables seem to be fresher than those that have traveled across country in a big rig. Anyway.. for all the reasons that may apply - convenience, availability, times allotment - using frozen asparagus works for me in a pinch. Additions and subtractions - all are just fine. One 12 ounce package of frozen asparagus tips and pieces 2 small potatoes, cut into pieces 2 shallots (1 onion or 1 leek) chopped 2 to 3 cloves of garlic 3 Tablespoons of olive oil 3 cups of hot water (amount may vary so start with less) Parsley or cilantro (a few sprigs) Salt and pepper to taste (Aleppo pepper is great) Swirl of milk or cream (optional) Sauté potatoes, cover with waxed paper Add shallots and garlic until softened Add thawed asparagus Cook a couple of minutes Add parsley or cilantro if adding Add hot water Blend to smooth, adding hot water or a dash of milk or cream Add salt and pepper to taste Serve |
