There are so many ways to make carrot soups, some using potatoes, sweet potatoes or just carrots. Here is a simple one, to which you can add herbs like parsley, dill, cilantro or spices like coriander, cumin, mustard seeds – an infinite variety! 5 cups of vegetable stock or water 1 medium onion, chopped 2 cloves of garlic 1 Tblspoon freshly grated ginger 2 pounds of carrots 1 thinly sliced sweet potato or white potato (medium size) 1 cup orange juice (optional) salt & pepper to taste Saute onion until soft Add garlic, potato, carrots and ginger and stock Cook until carrots and potato are soft (20 –25 minutes) Puree soup Add orange juice if using Season with salt & pepper Serve |
