Chick peas or garbanzo beans are high in fiber and protein and can be delicious in so many ways. Hummus is one and incorporated in a soup is another. If you use dried chick peas, they must be soaked in water for about 8 hours. Canned chick peas are quick and easy but more expensive. This recipe will feed 6 to 8 people, depending on portion sizes. 2 cans (20 ounces each) of chick peas or 1 cup dried chick peas 1 cup crushed tomatoes 6 cloves of garlic, crushed ˝ cup of olive oil 1 ˝ cups of water or broth 1 teaspoon of curry powder (or according to taste) Salt and pepper to taste Sauté garlic in olive oil Add chick peas and cook for a minute or two Add tomatoes and continue cooking for a few minutes Add water or vegetable broth and curry powder and cook for 5 to 10 minutes Puree or mash if you like the lumpy but interesting texture of chick peas and tomatoes Serve with a swirl of good olive oil |
