CROSTINI II Since crostini are so ubiquitous an appetizer, I am adding to our already extensive list. Imagination and availability of ingredients are the sources of an endless variety. I am suggesting this as one more delicious choice.8-10 people (amounts vary) Aprox. 20 toasted rounds of a baguette 10 oz. Of plain goat cheese 3 Tbls finely minced chives or shallots 3 Tbs finely minced garlic 3 Tbs chopped herbs (oregano, basil, thyme,etc.) 3 to 4 roasted peppers, skinned and sliced in thin strips 4Tbs olive oil 3Tbs lemon juice salt & pepper to taste Mix goat cheese, shallots, garlic, herbs, salt & pepper olive oil and lemon juice together. Spread on toasted baguette rounds Add slices of roasted pepper Voila ! |
