My daughter, Kaitlin devised these delicious green beans after she tasted some she had at a restaurant in New York. The almonds and garlic (and shallots, if you use them) are lightly caramelized and add a marvelous crunch and sweetness to the beans. 1 pound of fresh green beans (haricot verts are particularly good) several cloves of garlic, slivered ½ cup (or more) slivered almonds 3 Tablespoons olive oil 1 Tablespoon butter 1 or 2 shallots, slivered (optional) Trim and cut the green beans and steam until tender (15 to 20 minutes - the time varies ) Saute the shallots and almonds in olive oil until lightly carmelized Add the garlic and continue the carmelization process Add the steamed green beans Add salt & pepper to taste GREEN BEANS AND TOMATOES Another great way to prepare fresh green beans: 1 pound of fresh green beans steamed until tender 1 can of tomatoes or several fresh tomatoes 3 cloves of garlic 3 Tbs olive oil Toss the steamed green beans into the tomatoes, garlic and oil Add salt & pepper Add herbs like oregano or sage (optional) Serve |
