This is one of those super simple soups that make us feel warm and cozy on a chilly evening. Amounts vary by how much soup you are making. Olive oil Garlic Canned tomatoes Mushrooms: white Crimini, Use only one kind or vary your soup with several kinds Portobello Shitake Dried porcini Herbs : Tarragon Thyme Oregano Use one or several. I like tarragon especially, but the Others are equally good. Whatever is available & Rosemary, Fresh Mint Lightly sauté garlic in olive oil. Add sliced mushrooms Saute lightly Add herbs Add tomatoes to cover the mushrooms Cook gently for several minutes Add hot water to a soup consistency you like ( aprox the same amount of tomatoes) Simmer for about thirty minutes Add more herbs at the finish Season with salt & pepper to taste Serve * When using dried porcini, wash carefully and soak until the mushrooms are softened. Cut into small pieces. Strain the mushrooms , reserving the broth and add to soup. |
